Cake Construction:

Lemon Pound Cake with lemon curd filling and lemon buttercream. Champagne colored base with white buttercream border. Fresh Flowers.

This cake was not for a wedding. It's actually not even a cake! Three tiers of thick styro-foam covered in fondant and decorated in Chef Ricci's Advanced Wedding Cake course at the Harborside campus of Johnson & Wales University.
Airbrushed Sugarpaste Flowers: Roses, star flowers, Cala Lily, trumpet flowers, forget-me-nots, carnations, and matching buds for all (additional coloring with Petal Dust)
Cake Construction: 1st tier uses fondant swag technique and swiss dots, 2nd tier uses ribbon-insertion and brushed embroidery, 3rd tier is same as 1st, pale pink fondant on 1st and 3rd tier, white-white on 2nd.

Cake Construction: 3 Tiers lemon cake with lemon curd filling and white buttercream, 1 tier white almond cake with white buttercream. White-white rolled fondant, Tiffany box top theme, Tiffany blue accent color, sugar paste pearl border, piped lace drape on 3rd tier, Quilt-impression on 2nd tier, Swiss Dot on 1st tier. Fondant ribbon on top

Cake Construction: 2 layer white cake with white American buttercream, vanilla white-white rolled fondant, sugar paste pearl boarder, buttercream embellishment on sides.

Introduction to Blogging

As I have never 'blogged' before, and am not exactly sure what a 'blog' is, I have titled this first attemp as an Intro. This way, if I am a bad first-time blogger, I can blame it on inexperience. Good plan, right? Anyway, this project was created to display wedding cakes in my portfolio. I am a pastry chef with a large hotel company. This keeps me very busy. However, I look forward to wedding season on the off chance I might get a few on-the-side wedding cake jobs. This is my passion, and I hope one day to be able to do it on a more frequent basis. But, for now, it remains a very rewarding and challenging hobby.
